Premium Burritos

Combine:

30oz ckd, shredded chicken breast

1.5 c salsa or enchilada sauce

1.5 c shredded mozzarella cheese

Combine:

>2 c finely chopped kale, stems removed

4 c cooked white rice

1⅓ cup dry rice cooked in 2⅔ cup H20

3 c sweet or regular potato flesh

wash, pierce & bake whole wrapped in foil

12, 10-inch Flour Tortillas (30 gm carb ea)

To keep these quick & easy to digest for pre-workout fueling, skip the typical addition of fiber-rich beans & higher fat meats/cheeses. Stick with white tortillas & white rice for reduced fiber. If you have at least 1.5 hours (ideally 2 or more) pre-workout, try a whole one. If less than 1.5 hour before your next workout, try a half. If prepping these for use post-workout, feel free to err more whole grain +/- legumes, if desired.

Chicken Mixture: Most convenient- try Costco’s hand-pulled rotisserie chicken breast meat, pre-cooked and relatively shredded. OR make your own! Combine with salsa and cheese.

After rice is fully cooked, combine with potato & kale until kale is wilted & potato well distributed

Put roughly ⅓ cup of chicken mixture & ½ cup of rice/potato mixture in each tortilla or until evenly divided. Roll up & freeze. To heat from frozen, microwave on a slightly reduced power level (will vary by microwave)  for ~2 minutes on each side.
