Meatballs

Adapted from Run Fast. Cook Fast. Eat Slow


Ingredients

Combine: 

1# ground elk/beef

1 egg

½ tsp salt

¼ tsp ground black pepper

4 cloves garlic

¼ cup finely chopped parsley 

    (or generous sprinkle dried basil)

⅓ cup almond flour

>½ cup grated fresh parmesan

1-2 Tbl olive oil


Directions

  1. Preheat oven to 375 degrees. Line a baking sheet with foil or parchment; spread oil evenly over sheet to prevent meatballs from sticking. 

  2. With a spoon or 1.5” scoop, shape meatball mixture into small balls, spacing evenly on prepared baking sheet. 

  3. Bake in the center of the oven for 13 minutes. Remove from the oven, flip each meatball and return to the oven for ~8 minutes or until the internal temperature reaches >165deg. 

  4. Serve on Superfood Soup, as the protein component of a rice bowl or on spaghetti.
