Baked Chicken Nuggets

Ingredients

2 tsp. olive oil

6 tbsp. whole wheat Italian breadcrumbs

2 tbsp. panko

2 tbsp. grated parmesan cheese

16 oz. boneless, skinless chicken breasts, cut into bite-sized pieces

Salt and pepper, to taste

Olive oil cooking spray


Directions

  1. Preheat oven to 425°F. Spray a baking sheet with olive oil cooking spray.

  2. Place olive oil into a large bowl. In a separate bowl, combine breadcrumbs, panko and parmesan cheese.

  3. Season chicken with salt and pepper, then and add to bowl with the olive oil and mix well.

  4. Working with a few chicken pieces at a time, place chicken into breadcrumb mixture, coat well, and place onto baking sheet in an even layer.

  5. Using the olive oil spray, lightly coat chicken and bake for 8-10 minutes. Turn chicken and cook for an additional 4-5 minutes or until chicken is cooked through.

Makes 4 servings.
