Blackberry Spinach Salad

Ingredients:

6 cups fresh baby spinach                     

2 Tbl olive oil

1 cup fresh blackberries                         

1 Tbl balsamic vinegar

1 cup cherry tomatoes, halved               

2½ tsp honey

1 green onion, sliced                               

1 garlic clove, minced

2 Tbl chopped walnuts, toasted             

1 tsp Dijon mustard

2/3 cup crumbled feta cheese               

¼ tsp ea salt & pepper

Instructions:

In a large bowl, combine the spinach, blackberries, tomatoes, onion & walnuts.

In a small bowl, whisk the oil, vinegar, honey, garlic, mustard, salt & pepper. Drizzle over salad and toss to coat. Sprinkle with feta; serve immediately.
