Chicken Cheese and Spinach Manicotti

Ingredients

1 ½ cups chicken breast, cooked and finely chopped

2 garlic cloves, minced

1 – 10 oz. pkg. frozen chopped spinach, thawed and well drained

1 – 16 oz. container low fat cottage cheese

2 egg whites

1 cup shredded 2% mozzarella cheese, divided

10 manicotti shells, cooked and drained

1 ½ cups spaghetti sauce

¼ cup fresh basil, chopped

Directions

  1. Heat oven to 350°F.

  2. Combine chicken and garlic in a large bowl. Add spinach, cottage cheese, egg whites, and ¼ cup mozzarella.

  3. Spoon mixture into manicotti shells and place into a 13 x 9-inch baking dish sprayed with cooking spray. Cover with spaghetti sauce.

  4. Bake 25-30 minutes or until heated through. Top with remaining mozzarella and bake for 5 minutes or until mozzarella is melted. Garnish with fresh basil.

Makes 5 servings.
