Annie's Granola

In a small-medium saucepan combine:

1/2 cup honey

1/2 cup maple syrup

1/2 cup coconut oil

1 cup applesauce

1 tsp cinnamon + 1 tsp nutmeg (freshly grated is best)

1 tsp salt

Bring to a boil for 2 minutes. Remove from heat & add:

2 tsp vanilla

1/2 tsp almond extract

In a separate bowl combine:

4 cups rolled oats

2 cups buckwheat groats

2 cups nuts, roughly chopped (I prefer pecans, hazelnuts & walnuts)

1/8 cup chia seeds

+/- 1/2 cup pumpkin seeds

Mix everything together and bake @ 300 degrees on two large parchment-lined cookie sheets for 30-35 minutes, stirring halfway through baking.

Then add:

2 cup dried berries (I prefer blueberries & cherries)

Makes ~15 cups granola
