Baked Oatmeal with Berries

3 cups Old Fashion Rolled Oats

generous ½ cup dried fruit 

          i.e. blueberries/cherries

⅓ cup brown sugar, packed

2 tsp ground cinnamon

Pinch nutmeg

1 tsp salt


4 eggs

3 cups milk

½ cup applesauce

1 Tbl vanilla

½ cup fresh or frozen berries and/or peaches

In a large bowl, combine dry ingredients. In another bowl, whisk together eggs, milk, applesauce & vanilla. Stir in berries & oat mixture just until combined. Place in 13x9x2” baking dish prepped w/ non-stick cooking spray.

Bake at 350 degrees for 50-55 minutes or until oats are tender and liquid is absorbed. Cut into bars. Eat cooled as a bar, or serve hot in bowls with milk, yogurt & honey, if desired.
